The capsaicin detector is primarily used for measuring natural capsaicin in various chili peppers and chili pepper products. The instrument consists of a brightness-emitting diode light source, a colorimetric cell, a high-sensitivity integrated photodiode, a microprocessor, a large-screen LCD display with Chinese characters, and an embedded miniature thermal printer integrated chip. It can directly display the content of relevant indicators in the tested sample on the large-screen LCD display, print the analysis results, and transmit data to a computer via a computer interface for data analysis.
The capsaicin components in the sample react specifically with a color reagent under certain conditions, producing products of varying color intensity. These products selectively absorb visible light of different wavelengths, and the depth of color (i.e., the absorbance) correlates with the concentration of the indicator component in the sample. Within an appropriate concentration range, this relationship follows the Lambert-Beer law. Therefore, the absorbance values measured by the instrument are automatically calculated using the built-in standard curve software to determine the accurate concentration of the indicator component in the sample and whether it exceeds the limit.
